The preserving of the Sardina Pilchardus variety of pilchards is done using the fresh and Traditional methods. They are cleaned by hand, one by one, and fried in virgin olive oil. Preserved pilchards, like the White tuna, have a flavour which improves with the years, becoming more tender and delicate. As with good wine, the White tuna and pilchard products can be stored in a “cellar”, as their quality and flavour improves over time.
