Our Traditional-style anchovies are produced using a craft process which differs from the method that is used to produce our anchovies in olive oil. The salt is cleaned off them with great care and filleted one by one with a knife, without removing the skin. This gives them a silver hue and conserves all the original, intense flavour of the salting process. They are then marinated in extra virgin olive oil and a touch of parsley.
They make an ideal appetizer due to their authentic flavour and original, attractive presentation.
