New potatoes with butter and parsley

Serves 2

Ingredients:

New potatoes, parsley, butter

Method:

  1. Place the new potatoes in a saucepan, cover with cold water, add a pinch of salt and bring up to the boil.
  2. Once the water is boiling, turn down to a steady simmer. Check if the potatoes are cooked by poking with a knife, if it slides in easily the potatoes are ready.
  3. Carefully drain off the water, add the butter and chopped parsley and toss until coated.
