Description: This semi-hard cheese is aged to around 8 week. It has a close, firm texture and is washed in Somerset Cider Brandy.  Named after a local land mark which rises above the Somerset levels, as does the sweet, nutty flavours of this cheese which continue to delicately rise on the palate
