For best results when cooking, your cockerel should not go straight from the fridge to the oven. Please allow a little time for your bird to reach room temperature prior to cooking. Calculate the roasting time for your cockerel based on 12-15 minutes per 450g (1lb). Preheat the oven to 190℃/375F/Gas 5. Remove all packaging, smear a little butter over the bird, season with salt and pepper and cover the breast with streaky bacon. Put the bird in the roasting tin and cover the top of the tin with baking foil. Approximately 40 minutes before
the end of cooking, remove the foil, discard the bacon. Drain off any excess fat from the tin. Return to the oven to finish cooking and crisp the skin, basting regularly.
